July 14th is National Cow Appreciation Day, a day dedicated to one of the most under appreciated--yet widespread--species of animals on Earth. Whether they are raised as livestock for meat, milked to make a variety of different dairy products, or used as draft animals to pull carts, plows, and other implements, the ubiquitous cow richly deserves a day of appreciation.
